        • L\u2019ordre de cuisson des poissons est tr\u00e8s important.<\/div><\/li>
        • \u00c9caillez et videz les poissons, lavez-les, coupez les plus gros en tron\u00e7ons. Pelez et \u00e9p\u00e9pinez les tomates et \u00e9crasez-les grossi\u00e8rement \u00e0 la fourchette.<\/div><\/li>
        • Faites chauffer l\u2019huile dans une marmite<\/div><\/li>
        • ajoutez-y oignon, poireau, tomates et gousses d\u2019ail press\u00e9es dans un presse-ail, puis le fenouil, le thym, le laurier, l\u2019\u00e9corce d\u2019orange.<\/div><\/li>
        • M\u00e9langez bien et faites revenir 8 min.<\/div><\/li>
        • puis ajoutez les crabes et les cigales.<\/div><\/li>
        • Mouillez avec l\u2019eau bouillante, salez, poivrez et faites bouillir 5 min cela est indispensable pour permettre \u00e0 l\u2019huile et \u00e0 l\u2019eau de s\u2019\u00e9mulsionner et de donner une sauce velout\u00e9e.<\/div><\/li>
        • Au bout de 5 min d\u2019\u00e9bullition, ajoutez rascasses, congre et baudroie, faites bouillir 5 mn, toujours au m\u00eame rythme;<\/div><\/li>
        • ajoutez les poissons \u00e0 chair tendre girelles, saint-pierre, vives, loup, grondin…<\/div><\/li>
        • Continuez l\u2019\u00e9bullition pendant 10 min<\/div><\/li>
        • go\u00fbtez pour rectifier l\u2019assaisonnement<\/div><\/li>
        • ajoutez le safran et retirez du feu.<\/div><\/li>
        • Servez poissons et bouillon dans le m\u00eame plat<\/div><\/li>
        • Chacun disposera des tranches de pain grill\u00e9 dans son assiette, les arrosera de bouillon et d\u00e9gustera les poissons de son choix. Vous pouvez pr\u00e9senter en m\u00eame temps que la bouillabaisse un bol de rouille<\/div><\/li><\/ul><\/div>
